Healthy chocolate chip cupcakes and one more xmas tree...

Over on Jenny Crusie's blog a couple of weeks ago I mentioned some relatively healthy chocolate cupcakes I had recently eaten. They featured black beans which I do not like but you can not taste them. They taste like rich, dark chocolate cupcakes. (BTW you can't taste the coconut oil, either, or my mom wouldn't eat them as she hates coconut. She loves the cupcakes, though.)

I made them today again. Here's a picture:

Here is the recipe for the cupcakes and the glaze. The glaze is made with coconut oil so even it is slightly healthy.

Black Bean Chocolate Cupcakes

Cupcake Ingredients:
2 cups drained and rinsed black beans
3 eggs
1/3 cup cocoa powder
1/3 cup coconut oil
½ cup honey
1 tsp vanilla
½ tsp baking soda
½ tsp salt
½ cup choc chips (optional but I like to put dark)
Preheat oven to 350 F. Line 12 cupcake tins.
Blend all ingredients (except choc chips) in blender or processor until well mixed and smooth.
Stir in choc chips if using them.
Spoon into paper lined cupcake pan about 2/3 full.
Bake 20 to 30 minutes depending on your oven.
Cool on wire racks.

Glaze ingredients:
Melted coconut oil
Confectioners’ sugar
Milk (can be nut milk if don’t want dairy)
I don’t have measurements for this. I usually melt a generous 2 tbsps of oil, add enough c sugar and milk to make a glaze consistency.

Can glaze when cool or refrigerate then glaze.

Will keep in an airtight container for a week or so. (Not at my house, though.)

Happy holidays y'all...

I made a magazine xmas tree for my cubicle and I was quite pleased with the results:



This lead me to remember a couple of other unusual trees I like. For example, the last couple of years my local library, which I love, has done a book tree, which I also love. Here is this years book tree:


A couple of xmas's ago we were in San Diego to spend the holiday with my brother. We went to Spanish village and I was enchanted with several xmas trees made from chicken wire, of all things, and scraps of material. Here is my favorite:


I just love that blue and silver.

Random thought:
Tides happen because the Earth and the moon are attracted to each other. The moon pulls at everything on Earth to bring it closer. Earth can hold onto everything except water because water is always moving. The water in us is covered in flesh so that the Earth can hold onto us. The less we move the more flesh we develop because it is harder for the Earth to hold us otherwise. Less movement equals more fat even on a cosmic level.

*A paradelle is a poetic form that started as a joke. Former US Poet Laureate Billy Collins published a poem titled “Paradelle for Susan” footnoted to claim the paradelle was a demanding French form from the 11th century. He later admitted it was a parody of strict forms like the villanelle. His hoax resulted in an anthology published by Red Hen Press in 2006 with an introduction by Collins.

Mexican Cornbread

I am working up some recipes I use a lot with nutritional data. Thought I would share some with you. Here is one for Mexican Cornbread that makes 8 servings and works well with a little salsa and (if you can afford the calories) sour cream:

Mexican Cornbread
Oven on 350                                                                                   
Pour two tbsps Extra Virgin Olive Oil in iron skillet                    
swirl to coat bottom of skillet
Mix in a bowl:
2 cups Self Rising Corn Meal Mix                                  
2 cups low fat buttermilk                                                        
1 cup shredded cheddar cheese                                              
9 oz lean ground beef fried and drained                                  
4.5 oz can chopped green chilies, drained
4 oz jar pimentos, drained                                                
Ladle mixture into the iron skillet. Spread evenly. Put in oven. Bake 45 minutes. Remove from oven  and sprinkle top of cornbread with:
1 cup shredded cheddar cheese                                                     
Put back in oven and bake until cheese on top is melted and bubbly. Cut into 8 pieces.
Total all:                       Calories: 3255  Carbs: 276g  Protein:159g  Sodium:12982Mg
Total (divided by 8) per piece: Calories: 407 Carbs: 34.5g Protein:20g Sodium:1623Mg

It is yummy!
